A native of Marseilles in southern France, Michel honed his craft in local restaurants before launching his Côté Théâtre restaurant in Perpignan in 1998. In 2001, Michel’s talent and culinary creativity were rewarded with the highest honor: he received his first Michelin star.

Since 2002, Michel has become Chef and Director of Bordeaux’s celebrated Saint-James Hotel. Once again his culinary boldness and imaginative menu were rewarded in 2009 when he earned his second Michelin star.
